VARIETIES
Garganega and Trebbiano di Soave.
PRODUCTION DISTRICT
Vines aged 15–25 years, selected on the hills in the Classico district. Grapes are handpicked from late September to early October, depending on the altitude and aspecting of vineyards.
WINEMAKING METHOD
The grapes are crushed and then pressed delicately to extract the juice, which is stored in stainless steel fermentation tanks at controlled temperature. Fermentation proceeds at 15 °C so as to preserve the grape aromas and fruit fragrance.
SENSORY PROFILE
A pale straw yellow wine, Bolla Soave Classico offers a fruity aroma and a smooth, refreshing flavour, with pleasant hints of pear, melon and ripe apple. The finish is long and lingering.

RECOMMENDED CELLARING
2 years in bottle laid down horizontally in a dark place, at the right temperature and humidity.
FOOD PAIRING
A wine with personality, ideal modern cuisine, creative salads and sushi. Very fresh with appetizers, equally delicious with vegetable and pulse soups, fish or white meat.
