An “extra-ordinary” wine, breathing and opening up slowly after years in the cellar, like a butterfly emerging from the chrysalis in its endless nuances. In a word? Stunning. In every sensory perspective: nose, mouth and eyes.
The 2012 season enjoyed a relatively mild winter with little rain. This led to slightly earlier budbreak compared to historic averages. During April and May there was a cold snap that delayed flowering by a week. The summer brought high temperatures accompanied by scant rainfall. Thanks to a lowering of temperatures and some rain in later August, with noticeable day-night temperature ranges, the grape ripening cycle ended in the best possible way, giving healthy fruit.
VARIETIES
80% Corvina and Corvinone, 20% Rondinella.
Harvest began in mid September, with grapes picked and sorted by hand, and placed in trays. The grapes were fragrant and rich in colour and varietal aromas. They were set aside in the drying room, in appropriate temperature, ventilation and humidity conditions, until the second week
in January.
Drying concentrated phenolic compounds, aromas and sugars in the berries. Crushing began in late January, when the grapes had reached a sugar concentration of 28–29 degrees Brix.
SENSORY PROFILE
Garnet hues and purplish rim, hints of tobacco, aromatic herbs and bottled fruit on the nose, with notes of chocolate, plum and morello cherry jam on the caressing palate. A finale nuanced with spice and balsam delivers a long, lingering finish.
